Javier Armenta. great book kept me interested must read. Vegetarian entrees include Spinach Filled Tortilla Rolls and Corn Frittata.
Each is prefaced with a preparation and cooking timetable and most can be prepared in under an hour, although some dishes require marinating (Thai Barbecue Chicken) or freezing (Pineapple-Orange Frozen Yogurt). There's also a discussion about healthy eating in general. I've had probably a hundred during my lifetime and when I saw this book I had to have it. Some parts not so much. The temperatures there are below freezing from September through April!
For those of you who don't think you have time to prayerwalk, consider that the author has a full-time job as a high-school English teacher as well as her responsibilities of being wife and mother. morale is most important in any situation. They make me smile.. Walking on eggshells, day after day, futilely trying to find new ways to spin a life of straw into a golden dream.
